“I am still speechless after seeing the most perfect tarte tatin in the Western Hemisphere being created. Jim, the chef at Le Pichet beckoned me back into the kitchen and there it was in its huge cast-iron pan. Moments later it was freed and you can see the results in the top left photo. Holy mother of desserts, this tarte deserved to be enshrined. Alas it was meant to be eaten and I can guarantee you that anybody who tasted this wonder of baking had a very, very spiritual eating experience.”
