Rack of lamb has been the signature dish since Day One, and it justly deserves recognition. Among antipasti, Verdura salata, a simple sauté of escarole in fruity olive oil with olives and pecorino Romano, stands out. Among pastas, fettuccine Genovese (caramelized onions, prosciutto and herbs) is a winner. Meats and seafood receive respectful, simple treatments: Roasted chicken breast covered with roasted garlic cloves and accompanied by unsurpassed mashed potatoes, and beef tenderloin in red-wine sauce offer worthy alternatives to lamb. Desserts earn high marks across the board–Marquis, a mousse cake that penetrates to a chocolate heart, deserves special attention.
